There are many different ideas about what a Dutch Oven is. I was taught that is is a cast iron pot with legs and a tight fitting lid with a flange.The legs hold the oven up off the coals and the flange keeps coals out of the food when you lift the lid. They come in various sizes. I have one that is large enough that i can cook a 13 pound turkey in it.
The temperature inside the oven is controlled by how much coal is used. Charcoal briquettes have taken a lot of the guess work out of the game. Start the charcoal like you would to BBQ. When they have turned white its time to put them on the oven. People have their own ways of determining how much charcoal is needed to achieve 350 degrees to 375. What I do is, say I am using a 12 inch, I take 12 x 3 and get 36. I divide that by three and get 12. I put 12 briquettes under the oven and 24 on the lid. Now it is best to preheat the oven just as you would do a conventional oven.
The next step is very important so your food will cook evenly. Every 15 minutes turn the whole one quarter turn clockwise then turn the lid one quarter. That is pretty much what has to be done.
